The Annual Conference of the International Sweeteners Association is a favourable moment for competitors to take a break and look together in the same direction, at developments, trends and the political scene surrounding their products. Sweeteners have one thing in common: they are sweet. This was an obvious way to highlight shared interests at the Conference. Research in perception of tastes was presented by several speakers. The taste of sweetness is perceived very differently according to the composition of the product in which sweeteners are used. This was demonstrated at the Conference both from the scientific point of view as well as in a practical tasting demonstration. A special feature of this year's programme was an afternoon session devoted to Eastern Europe. Whereas in Western countries, sweeteners have evolved continuously from being used in special diets to currently being part of the diet of the general population, it is likely that in the new democracies, the use of sweeteners may enter directly into a modem lifestyle concept. The market potential is enormous as was shown by the speakers. The rate of growth, however, will depend on general economic growth.

These views are now presented in this short proceedings which summarises the 10 presentations that covered topics including caloric restriction and health, developments in legislation, sweetness perception, quality of sweetness, perception of low-calorie products, the changing image of sweeteners, consumer trends, research, and business.
